$10 Tuesday | BBQ Chicken

Y'all know me.
I'm all about budget friendly, simple & delicious foods. I like to keep it basic because I don't like to waste time && I definitely don't like the clean up.

So I want to really focus on bringing that to you! I get all the time people who say they cant eat healthy because..... they can't afford it.
I think this is karma because I used to use this excuse NONstop as I drove through fast food and went out to eat constantly.

Anyways, I'm gonna start something called $10 Dollar Tuesdays where I share a meal with you that I made that costs me less than $10! You in?!?

Our first $10 meal >> BBQ Chicken!
One thing youll learn with me is that I love the grill (again back to the clean up aspect).
For cheap and simple, I keep it basic. A meat, a potato & a veggie. Green beans wouldn't be my top veggie pick, but they are cheaper for us since we can them &&& my family actually likes them-- dinner with kids...

Ingredients & Price
Chicken -- $10
Potatoes -- $3.49
Green beans -- .89
Sour cream -- .89
Shredded Cheese -- $1.99
BBQ Sauce -- .89
Bacon -- $4.19

I KNOWWWWW, you're thinking. WTF. She just said $10 and the chicken alone hits that. But hear me out. When you're shopping what you want to do is think long term. What can you buy that gets you the most bang for you buck. That chicken, it will cover two separate meals. What I do is I use half and put the other half in the freezer for a different meal. Those potatoes well they will last me all week! making them .50 for this meal! Same for the other ingredients. The only thing we eat all of in one meal is the green beans. Literally everything else we can use for tomorrows meal or a different meal this week! So if you break items divided by how many days we can use them...

5 + .50 + .12 + .30 + .13 + .87 + 1.05 + .89 = $8.86 for this entire meal!

It covers vital food groups and is hubby approved in my house. He's a meat and potato man!
The meal is crazy simple and super delicious. Let me share my recipe below so you can try it too!

Himalayan pink salt
ground pepper
onion powder
3/4 cup shredded cheese
Instructions
Rinse off your potatoes and stabbed multiple times with a fork. rap eat potato individually in plastic wrap in microwave for 3 minutes. While those are cooking, fry up your bacon and mince it.
When the potatoes are done take them out, unwrap, cut in half and scoop out the insides. Be sure and leave a thin layer on the outside of the skin to keep your potato sturdy.
put the potato guts in a bowl add in sour cream, half a cup of cheese, salt, pepper, onion powder (to taste).
Take the potato filling and add it back to the potatoes. sprinkle potatoes with cheese and bacon and put them in the oven to bake. I normally bake at 350 for 10-20 minutes until golden brown.

No Bake Super Cookie

Anyone else struggle with after school snacks? My kids, they LOVE junk. They walk in the door begging for candy, chips, cookies. All the things they don't need. I've made it a mission of mine to provide them healthy options when they get home. Today we are mixing up an old favorite &&& we even put a spin on it! No Bake Cookies, make with my supershake (Shakeology). We did vanilla & chocolate because my oldest is just like me; NOT a chocolate eater. So he has peanut butter flavor. These boys are gonna go nutsssss for these. I LOVE this option because its sweet, so to them its a treat. But it has the vitamins and nutrients from my supershake to help fuel their body (it acts like 7 salads) so #momwin I don't feel guilty packing this in their lunch, letting them grab a couple as they run and play. No Bake Super Cookie Ingredients: 2 scoops chocolate Shakeology OR vanilla Shakeology 1 cup oats 1 cup Peanut Butter 1/2 cup honey 1/2 cup coconut o...
