Cucumber and Tomato Salad

Real talk, I'm not a big veggie eater.
Especially before I started being healthier.

I used to think that in order to be healthy I just meant you had to have salads all day everyday.
but the thing was I just never got creative with my vegetables! I never tried new recipes.

Today I'm on day 2 of my 3-day cleanse. And I have to share one of my favorite recipes from the dinner list. Because honestly I could eat this salad all the time 🙌

Cucumber tomato salad
Ingredients
1 tbsp balsamic vinegar
2 tsp lemon juice
1 tsp extra virgin olive oil
1/2 medium cucumber, cubed
1/2 cup cherry tomatoes, halved
1 tbsp chopped onion
1 tbsp  Italian seasoning
1 dash Himalayan sea salt

Directions
Combine the vinegar, lemon juice and oil in a small bowl mix up and set aside. combine the remaining ingredients in a large bowl mix well and drizzle with dressing. Toss it gently and enjoy!

Ya'll it's been interesting over here. I know its been a few weeks since I've blogged & I'm just gonna keep it real, its because my focus right now is keeping my head above water! You know my goal is $10 or less, What if I told you breakfast for under $2?!? YUPPPPPP! Friends, get on my level.  That's cheaper than stopping at the gas station, running through fast food and 100x healthier! Let me share with you one of my favorite breakfast meals! Overnight Oats & Eggs Super simple, super easy, budget win. x Now let's break it down. Oatmeal -- $2.29 Blueberries -- $2.29 Almond Milk -- $1.99 Eggs -- .88 Mushrooms -- 1.89 ________________________ Total spent = $6.57 But wait, that's before breaking it down by the number of days you can use it for. This is over a weeks worth of breakfast y'all. One tub of oatmeal can last me 2+ weeks! Eggs, you have plenty for 6 days, etc. So let me show you my best guess.
